I'm making a cookbook for thanksgiving what favorite foods should I put in for appetizers, beverages, soups and salads, vegetable and side dishes, main dishes, breads and rolls, desserts? I want them all to be thanksging related and a recipe for leftovers would be great to. thanks
For side dishes try Lime-Pear delight! It's great in your stomach and great for left-overs,too!
You will get answers for all the normal turkey day dishes- but here is a great, different, and freezable recipe for leftovers
Remove all meat from turkey bones, set aside 2 cups meat for the soup and use the rest of the leftover turkey for sandwiches, etc…
Turkey Tortilla Soup
Turkey Carcass
1 onion
3 stalks celery
whole peppercorns
2 unpeeled carrots
1 bay leaf
2 cups leftover diced turkey
Cover Carcass with water and add other ingredients, cook on medium heat for an hour. Strain the broth, place in large pot or bowl and in the refrigerator-
or if cold enough, in the garage. The next day, scrape the fat off the top and dispose. Set broth aside
In a large stockpot, soften one large chopped onion, 3 stalks celery, and 2 cloves garlic in olive oil. Add 4 cups broth ( add chicken stock if you don't have enough turkey stock), 1 jar mild salsa, 1 can whole kernal corn, 1 can blacked beans, rinsed, and cook for 30 minutes, ( freeze some at this point if you wish…) add turkey meat and 1/2 cup chopped cilantro. Serve with crushed tortilla chips, shredded monterey jack cheese and diced avocados on the top.
